＜完成 ：シトラスパウンドケーキ＞
今回は、『ウィークエンド』」というタイプのパウンドケーキをご紹介します。通常パウンドケーキは、バターと砂糖を良く混ぜてから卵、粉を入れて作りますが、ウィークエンドは卵と砂糖を良く泡立ててから溶かしバターと粉を入れます。また、通常の底の部分が上になります。「ウィークエンド」という名前ですが、お酒をたっぷり使うので、「週末に楽しむためのお菓子」というのが由来です。名前の通り、週末にくつろぐのにぴったりなお菓子です。
<材料／パウンド生地>
卵／62g 、卵黄／30g、砂糖／93g、ライムとレモンの皮／各1/2 個、はちみつ／38g、小麦粉／76g、アーモンドパウダー／25g、ベーキングパウダー／2g、生クリーム／10g、レモンジュース、ライムジュース／20g、バター ／62g
<材料／アンビバージュ>
シロップ 17B／50g、ブランデー／10g
下準備：パウンド型にバターを塗り、強力粉をまぶし、余分な粉を落としておく。
<材料／アイシング>
粉糖／200g、卵白／10g、 ライムジュース／20g
1.Aのグラニュー糖の一部と、ライム、レモンの表皮よくすり混ぜる。
2.A全てをボールに入れ、ホイッパーで混ぜながら、３０℃位の湯せんで少し温める。
3.②をハンドミキサーで白くもったりとするまで立てる。
※卵を温める事でボリュームのある生地になります。
4.③にふるったBを加え、ゴムベラで軽く混ぜる。
※この後も混ぜるので、粉が見えなくなったら、次の素材を入れましょう。混ぜすぎに注意。
5.常温の生クリーム、ライムとレモンのジュースを順に④に加え混ぜる。
6.少し熱くしたバターに⑤の１部を入れ混ぜ、⑤のボールに戻し、全てをしっかりと合わせる。
7.パウンド型に流し、350/350F（175℃）のオーブンに入れ、約４０分焼成。
8.アイシングを作る。裏ごしした卵白を粉糖に入れ、ホイッパーでよく混ぜる。
ライムジュースを加え混ぜ、ラップしておく。
※アイシングはとても乾燥しやすいので、直にラップをした上で、ボールをラップしてください。
9.焼けたパウンドにシロップを打ち、アイシングを絞り完成。
