10年以上も前は、ニューヨークのラーメン専門店では、ニューヨーク在住の日本人や日本からの観光客の姿が店内を埋めつくしており、ラーメンの存在は“日本人が恋しがるあの味！”という印象の強い食べ物でしたが、それが数年経つと、店内でラーメンを食べているのは、日本人以外の人の数のほうが多くなってきて、そして現在では、店内はもちろんのこと、店の外で空席待ちのために並んでいる人のなかにいる日本人の姿はごく少数で、そのほとんどがニューヨーカーであるというのが、ごく普通の光景となっています。ニューヨークには、いくつかのラーメンの専門店がありますが、ニューヨーカーの注目をいま一番集めているのが、今回ご紹介する『Ippudo NY（一風堂・ニューヨーク）』です。

そんなニューヨーカーが大好きな『一風堂・ニューヨーク』のラーメンですが、日本人なら、たとえラーメン通でなくとも、一度はこの「一風堂」という名前を耳にしたことがあるのではないでしょうか？　　『一風堂』が誕生したのは、1985年10月16日、福岡県は博多。店主である河原成美氏が、“ラーメン業界に一陣の風を巻き起こす”という熱い思いを込めて名付けられた『一風堂』の一号店は、カウンター10席だけの小さな店からのスタートだったそうです。そのラーメンとは、「豚骨ラーメン」の常識を覆す豚の臭みを除去したマイルドな味の豚骨ラーメンで、その店内は、まるで木工彫刻家のアトリエのような、木をふんだんに使った洒落た店内は隅々まできれいに磨き上げられていました。そんな心の行き届いた温かい接客は店に活気を呼び、また、それまでラーメンとは無縁だった女性客の支持も集め、博多のラーメン業界に一陣の風を巻き起こしました。以降、日本国内で34店舗を構える『一風堂』に大成長を遂げました。そしていよいよ、2008年３月に、待望のニューヨークでのオープン！　さすがニューヨーク店らしく“ラーメンは勿論、それ以外の食事やデザート、お酒も楽しめるダイニングを満喫できるレストラン”という、パーフェクトにモダンな『一風堂』として、地元ニューヨーカーに愛されています。
