店まで100％オーガニック！「エコ」にこだわりぬいたレストラン

ニューヨークと言えば、ロウフード・レストランやベジタリアン・レストラン、ビーガン・レストランのパイオニア的存在の都市。また、マドンナやリチャード・ギアをはじめとするセレブも取り入れている完全マクロビオティックなレストランもたくさん存在します。ここで、「100％オーガニックのレストランがオープン！」と言っても、いまさら誰も驚くことはないのですが、今年の1月にオープンし、全米だけでなく、世界中から注目されたレストランが、ここ『Gusto Grilled Organics（グスト・グリルド・オーガニックス）』です。 “100％オーガニック経営のレストラン”の何がすごいかといえば、その店の形態のすべてがオーガニックであることです。

ニューヨークで唯一、有機食材のみを使用する店に認定された『グスト・グリルド・オーガニックス』は、この徹底した食材の調理方法と、環境に配慮した“エコ”がテーマのレストラン。 環境のために、テーブルやイスは全て廃材を再利用しており、テイクアウトの容器なども分解され土に還る生分解性の素材を使用。また、電力も風力発電で作られた電気を使用しています。さらに驚くべきは、スタッフのユニフォームもすべてオーガニック素材で、 従業員が店に持ち込む物もオーガニック以外は禁止。また、お客さんが持ち込み可能なお酒もオーガニックのみＯＫという徹底ぶりです。ここまで徹底するという事は、電力、食材などは通常より10〜20％余計にコストがかかり、決してビジネスとしては成功してるとは言いがたいそうですが、オーナーのロベルトさんは「お金はかかるけど環境問題と健康を維持することは大切なことだから」、と言います。

オーガニックではあるけれど、ベジタリアン・レストランではないので、お肉料理やスイーツメニューも豊富な、アルゼンチン料理がベースになっており、個々の肥満防止のために、一皿の量も通常のレストランよりやや少なめになっているので、地球だけでなく、ダイエット中の女性にもありがたいレストランです。
