アメリカの映画やドラマのワンシーンでの“警官がコーヒーとドーナツ”、“会社員がスタンドで新聞とカップコーヒー”、がおなじみなように、コーヒーはアメリカでもっともポピュラーな飲み物、といっても過言ではありません。そんなアメリカでのコーヒー文化が、ここニューヨークではじ徐々に変わりつつあるのです。そんななか、今回ご紹介したいのがお茶専門レストラン『Sanctuary T（サンクチュアル・ティー）』。さすが“お茶専門レストラン”というだけあって、ここでは、なんと日本の緑茶からアルゼンチンのマテ茶までと、世界中から選りすぐりの77種類以上のお茶が味わえるのです。しかもそのメニューはただ単に“飲むだけのお茶”を飲むだけでなく、さまざまなお茶を、その特製や風味を存分に生かし、お料理やカクテルにまで使っているというユニーク且つ斬新なこの。なかでも、注目したい人気メニューは、抹茶にウオッカ、梨のピューレ、レモン汁を加えたカクテル（12ドル）。その他、紅茶やチャイなど使ったカクテルも大人気です。そしてお料理（6〜28ドル）では、肉や魚などの素材を、調理する前にそれぞれの相性にあったお茶で蒸すことで余分な脂を出すことですっきりとした味わいにしたり、沸騰したお湯にさっとくぐらせたりすることで、風味が存分に活かされる調理法が魅力的です。この調理法は、味の良さを引き出すだけでなく、食材に抗酸化作用が生まれ、健康にも良いのだそうです。この調理法を用いた人気メニューは、なんと言っても「Red Moon salmon（レッドムーン・サーモン）／28ドル」。脂ののったワイルド・サーモンが、珍しいレッドムーン・ティーに湯くぐりされることによって、サーモン独特の臭みが消え、リッチなテイストはそのままに、さっぱりといただくことができます。
