ニューヨークでのジャパニーズフードの人気は相当高いもので、10年以上前の“ただの物珍しさ”や、ヘルシー志向のニューヨーカーが好んでいた“ヘルシーだから”という理由からくる人気ではなく、今となっては、もうジャパニーズフードがすっかり浸透し、そのうえでの定着した人気である、といえます。そんななかでも、さすが人種のるつぼのニューヨーク、各国の料理も文化も、ニューヨークらしくアレンジするのがとっても上手！　今回ここでご紹介する『Bar Fry（バーフライ）』は、日本の天ぷらをとってもニューヨークっぽくアレンジして提供していることで、話題騒然となり、しかもニューヨーカーからも大人気で、お店はなんと深夜までオープンしている盛況振りです。「天ぷらに目をつけたのは、“油で揚げる”という調理方法がアメリカ人にも比較的受け入れられ易いと考えたから。食に対するヘルシー志向が高まるなかで、あえて揚げ物に挑戦しました」と言うシェフ。ところが、アメリカ人のお客さんには躊躇する人は少なくないそう。「もちろん量を食べ過ぎると胃がもたれるのはあたりまえなので、前菜で野菜を食べて少量の天ぷらを頼む、とういう食べかたをお客さまに教えるというところから始めているよ」とのこと。レストランのコンセプトは、伝統的な日本の天ぷらではなく “アメリカンスタイルの天ぷらバー”」。衣は日本のものと比べると色が濃くてやや甘く、天ぷらとフリッターの中間といった感じ。さっくり感がありながらも、歯ごたえがあります。天つゆに変わるディップは、辛いレッドソース、スイート味噌ソース、わさびタルタルソース、ハラベーニョ醤油と変わり種が多いのには驚きです！
